MACA ENERGY BITES

These bites are my go-to travel (or anytime) snack. They taste like mix between a brownie and a chocolate truffle, but are nutrient dense and filled with good for you ingredients, including:
Maca = adaptogenic and antioxidant-rich root, with hormone balancing and energy boosting properties. Cacao = jam-packed with antioxidants (40 times the antioxidants of blueberries!) and a natural mood elevator.
Cinnamon = antimicrobial and a great spice for digestion and circulation.
Nuts = high in iron, magnesium and provide a good dose of healthy fat.
Drop the granola bar and make these ASAP.

Ingredients
1 heaping cup dates (about 15 medium dates)
2 cups mixed nuts (I recommend walnuts or pecans + cashews)
3 tablespoons maca
⅓ cup cacao
⅓ cup unsweetened shredded coconut + more for rolling
2 tablespoons cinnamon
½ teaspoon sea salt
Drizzle of hemp or coconut oil
Directions
Place the dates and nuts in 2 separate bowls, cover with filtered water, and let soak for at least 30 minutes.
Place dates, nuts, maca, cacao, coconut, cinnamon, and sea salt in a food processor and pulse to combine. Drizzle in just a little bit of hemp or coconut oil and pulse a little more. Shape into balls using a spoon or ice cream scoop and toss each one in a shallow bowl of extra shredded coconut to coat.
Makes about 20 - store in the fridge or freezer
